4 ears organic corn
½ small red onion, finely diced
½ green bell pepper, finely diced
½ red bell pepper, finely diced
½ bunch cilantro, minced
1 tablespoon olive oil
1 lemon, juiced
sea salt and pepper to taste
In a large pot, heat water to boiling. Place corn in pot and boil for 10 minutes; cool for a few minutes. Cut kernels from cobs and place in mixing bowl. Toss all ingredients in mixing bowl and enjoy.
