1 head of kale, shredded
¼ head of purple cabbage shredded
1 fennel bulb sliced thin
½ avocado, cubed
½ cup carrots, shredded
2 tablespoons hemp seeds
2 tablespoons raw sunflower seeds
2 onions – sliced thin
2 tablespoons ghee
Christa’s Easy Italian Dressing
sea salt
Melt the ghee in a stainless steel pan over medium to low heat. Add onions and a pinch of sea salt. Slowly cook until soft and caramel brown.
While the onions cook, begin shredding the veggies with a mandolin, food processor or by hand with a knife.
Make the dressing and massage into the kale and veggie mixture. Add the avocado, seeds, and top with the onions. Enjoy!
