For Crust:
2 cups raw almonds
2 cups pitted dates
1 teaspoon sea salt
For Syrup:
½ cup pitted dates
1 orange, seeded
¼ cup water
For Filling:
5-6 apples, peeled and thinly sliced
1 cup raisins or dried cranberries
2 tablespoons ground Ceylon cinnamon
Process the nuts in a food processor to make almond flour. Sprinkle a thin layer of this flour in the bottom of the pie pan to prevent sticking. Remove almond flour from food processor and place in a bowl; set aside. Place the dates in the processor and process until it forms into a ball. Combine the dates and the almond flour with your hands to form a ball; press into the pie pan to form a crust. Set aside.
To make the syrup, use a blender to combine the orange, dates, and water. Set aside. In a separate bowl, combine apples, cinnamon, and raisins. Pour syrup over apple mixture and combine. Arrange mixture on pie crust.
